Paleo Pumpkin Pie for CrossFitters

Ingredients
For the crust

  • 1 1/2 cup – almond flour
  • 3/4 cup – whole pecans
  • 1 tablespoon – coconut oil
  • 2 tablespoons – honey
  • 1 – egg
  • 1/4 teaspoon – salt
  • 1/4 teaspoon – ground cinnamon
  • 1/4 teaspoon – ground ginger

For the filling

  • 1 – 15 ounce can pumpkin puree or 2 cups of fresh pumpkin
  • 1/2 cup – almond milk
  • 3 – eggs plus 1 egg yolk
  • 1 teaspoon – vanilla extract
  • 1/4 teaspoon – kosher salt
  • 1 teaspoon – ground ginger
  • 1 teaspoon – ground cinnamon
  • 1/2 teaspoon – ground nutmeg
  • 1/4 teaspoon – ground clove
  • 1/4 teaspoon – ground cardamom
  • 1/2 teaspoon – lemon zest
  • 1/2 – cup grade B maple syrup or honey for SCD

Instructions

Using your food processor, transform the pecans until they resemble a coarse flour. Next, add the rest of the crust ingredients and process for about 15 – 20 seconds. It should start to resemble a dough. Take this mixture and press it into your pie plate. Be sure the dough mixture covers the entire bottom and sides of pie plate. (Pro Tip: Be sure to poke a few shallow holes in the crust with a fork to keep it from bubbling while baking.)

Next, preheat your oven to 325 degrees. Bake the crust for about 10 minutes. Remove and let cool for 10 minutes. Once cooled, place in the freezer for 20 minutes. Preheat oven to 350F.

Now prepare the filling by whisking all of these ingredients together in a bowl. Once the pie crust has frozen, add this mixture and bake at 350 degrees for 35 minutes, or until the filling has set but is still a little jiggly in the middle. If your crust browns prematurely, remove the pie and cover the bottom and sides with foil and continue baking. Once the baking has finished, turn the oven off and crack the door and leave the pie inside to cool for about 30 minutes. This will help prevent the pie from cracking on top. Place in the fridge to chill and serve cold with a coconut whipped cream topping.
