Thanksgiving Recipes for CrossFit Enthusiasts

Easy CrossFit Thanksgiving Recipes

Clean Green Bean Casserole

A big Thanksgiving favorite in my family is green bean casserole. This clean recipe makes one 8″ x 8″ dish.

Ingredients

  • 1 – sliced thinly yellow onion
  • 1 – tablespoon coconut oil or butter
  • 2 – chopped cups parsnips
  • 10 oz.- chopped mushrooms
  • 3 – cloves of minced garlic
  • 1/4 – cup nutritional yeast
  • 1 1/2 – cups of water
  • 1 1/2 – teaspoons fine sea salt
  • 1 – lb. fresh green beans

Directions

Start by melting a pat of coconut oil in a large skillet over medium – low heat. Add in the sliced onions and sauté gently for about 45 minutes. Stir occasionally until onions are caramelized. Use small amounts of water to keep onions from sticking.

While the onions are cooking start steaming the parsnips. Place a steaming basket in a large saucepan and fill with about 1 inch of water. Add 2 cups of the chopped parsnips and bring water to a boil. Cover, reduce heat to low, and steam for 8 – 10 minutes, or until tender. Remove and transfer the parsnips to your blender and set aside for later. Now steam the pound of green beans using the same saucepan and basket. Bring the water back to boil, cover, and steam until your preference, anywhere between 6 – 15 minutes should do. For softer beans, steam for a longer time. Place into the baking dish.

The onions should be finished so use the same pan to now sauté the mushrooms and garlic. Melt another dab of coconut oil, add the garlic and sauté for 3 minutes. Now add mushrooms and cook for another 6 – 8 minutes. Now pour and spread about 1/2 this mixture on top of the green beans in your baking dish. Add the other 1/2 of the mixture to the parsnips in the blender.

Preheat your over to 350F. Now add 1½ cups water, 1½ teaspoons sea salt and ¼ cup of nutritional yeast to the cooked parsnips and mushroom mixture in the blender. Blend until smooth and creamy. Pour this mixture into the baking dish, stir, and smooth over. Top with the caramelized onions and bake uncovered for about 30 minutes, or until bubbling.

Cauliflower Rice Stuffing

Thanksgiving isn’t complete without serving some delicious stuffing. That’s why we’re adding this food favorite to our first post in this series. We think you’ll love this alternative.

Ingredients

  • 2 – medium heads of cauliflower
  • 1 – tablespoon olive oil
  • 1 – diced large yellow onion
  • 1 – minced garlic clove
  • 4 – thinly sliced celery stalks
  • 3 – cups of sliced mushrooms
  • 1/2 – cup roughly chopped pecans
  • 2 1/2 – teaspoon dried sage
  • 1 – tablespoon poultry seasoning
  • 1 – teaspoon red wine vinegar
  • 1 – teaspoon sea salt
  • 1/4 – teaspoon black pepper

Instructions

Pulse the cauliflower in a food processor until it’s the same consistency as rice. Heat olive oil in a large skillet over medium-high heat. Next add the onions, garlic and celery and sauté for 5 minutes. Add in the cauliflower and cook for about 10 minutes, or until it’s fully cooked. Now add in the mushrooms and continue cooking until they’ve begun to sweat, or about 5 minutes. Top with pecans, spices and vinegar and cook for another 1 minute. Serve warm or store in refrigerator for up to 5 days.
